One-Pot Vegan Hamburger Helper

Vegan hamburger helper combines macaroni and vegan mince in a creamy, tomatoey sauce for a cozy, comforting, and super simple one-pot, 30-minute meal the whole family will love!

Ingredients

1 tablespoon neutral oil
1 package of vegan beefy crumbles
1 red onion, diced
3 tablespoons of tomato paste
1 tablespoon of garlic powder
½ teaspoon of chili powder
¼ teaspoon of smoked paprika
1 cup uncooked elbow macaroni
3 cups of veggie broth
1 ½ cups of vegan cheddar cheese
Salt & pepper, to taste

Instructions

In large pot over medium heat, add oil and saute the onions for one minute, then add the vegan beefy crumbles and cook for 5 minutes.
Mix in the tomato paste, garlic powder, chili powder, and smoked paprika. Then stir in the veggie broth.
Once the broth starts to boil, add in the elbow macaroni.
Reduce the heat to a low simmer and let it cook uncovered until the pasta is cooked and most of the liquid has been absorbed (about 12-15 minutes). Make sure to stir every couple of minutes to prevent it from sticking to the bottom of the pot.
Once the pasta is cooked, turn off the heat and add the vegan cheese. Mix well and cover with a lid for 5 minutes.
Taste and add salt and pepper if needed. (The plant-base crumbles and vegan cheese have salt so be careful with adding more salt without tasting first.)

Notes

Cook pasta al-dente: This ensures it doesn’t become too mushy in this one-pot meal.

Tweak to taste: When you season the veggie hamburger helper with salt and pepper at the end, feel free to tweak any of the other seasonings, too.

For a heartier meal: It’s easy to add different veggies to make even more of a substantial and nutrient-dense meal.
