Make The Best Vegan Breakfast Sandwich at Home

Now that we have access to so many amazing vegan alternatives to meat and dairy, it's easier than ever to pull together all your old favorites like the ultimate vegan BLT, vegan Just Egg omelette, vegan cordon bleu, or classic breakfast sandwich. Using simple vegan swaps, this vegan breakfast sandwich (vegan egg McMuffin copycat) is salty, savory, smoky, 'meaty', 'cheesy', 'eggy', and yet 100% vegan!

It's topped off with the perfect sweet and tangy sauce that ties all the ingredients together (so don't skip it!). Once assembled, it's hearty, delicious, and super satisfying, ready to enjoy for breakfast, brunch, or any time the cravings hit. You can even freeze this Just Egg breakfast sandwich for later.

The Ingredients

If you're unable to find the folded version, you can use liquid Just Egg to make vegan egg patties from a sheet pan omelette (20-25 minutes at 350F), folded vegan omelette, or like in this vegan Just Egg frittata (optionally with spinach/other veg).

What Else Could I Add?

  • Avocado: Add avocado slices or smashed avocado for a rich, creamy element (plus healthy fats and antioxidants).
  • Spinach: Add extra nutrients with a layer of sautรฉed spinach (with salt, pepper, + garlic powder to season it).
  • Sriracha: Or another hot sauce to drizzle over for heat. Alternatively, add some cayenne/ red pepper flakes to the breakfast sandwich sauce.
  • Hashbrown: Add hashbrown patties for crispy, potatoey goodness.

How to Make a Vegan Breakfast Sandwich

Step 1: First, combine the sauce ingredients in a small bowl, mix well, and set aside. Then, slice the tomato and optionally toast the English muffins.

Step 2: Meanwhile, cook the Just Egg according to the package instructions. Cook the vegan sausage and vegan bacon in a separate skillet according to their instructions.

Step 3: When the patties are almost ready, place a slice of vegan cheese on top of each one and cover the pan with a lid. Turn off the heat and allow it to sit for 1-2 minutes for the vegan cheese to melt.

Step 4: To assemble the best vegan breakfast sandwich, first spread some of the sauce on one muffin half. Then, add the vegan egg patty, sliced tomato, vegan sausage, and vegan bacon. Drizzle more sauce over the top and top with the other muffin half.

Enjoy vegan breakfast sandwiches alone or as part of a larger breakfast/brunch with healthy veggie muffins, breakfast potatoes, and a smoothie (like this simple blueberry banana smoothie) or juice (like this immunity boosting juice).

Pro Recipe Tips

  • Toast the English muffins: This will give them the perfectly crisp texture of a well-made breakfast sandwich.
  • Experiment with ingredients: As the ingredient section shows, this recipe is highly versatile, so swap out the elements (type of bread, vegan bacon, vegan sausage, vegan cheese, etc.).
  • Don't skip the breakfast sandwich sauce: It's sweet, tangy, delicious, and really brings the whole thing together.

FAQs

Could I replace the Just Egg?

I've tried a few eggy alternatives over the years, and Just Egg is definitely my favorite.

However, you could make a tofu egg patty by cutting it down to size and then pan-frying it with a little salt, pepper, nutritional yeast, onion powder, and kala namak. Tofu scramble would also work (but is messier to eat).

How to reheat vegan breakfast sandwiches?

I prefer to reheat the frozen vegan breakfast sandwich in a microwave (about 2 minutes) or in an oven or air fryer (wrapped in foil, at 350F/177C) until warmed.

To avoid a soggy muffin, toast the bread and reheat the fillings separately. Once warm, add the sauce, and dig in.

Can I make it like the Starbucks vegan breakfast sandwich?

Sure! They use an Impossible sausage patty with the vegan egg and vegan cheddar slice, and don't include vegan bacon.

If you want to make it like the UK version, they use a Beyond Meat patty, tofu scramble instead of vegan egg patty, and top it with sweet tomato relish.

Storage Instructions

Store: Once assembled, it's best to consume the sandwich immediately, as the warmth of the ingredients and sauce will turn the English muffin soggy.

To store it for later, allow the fillings to cool before assembling the sandwiches, then wrap them in foil to store in the fridge for up to 4 days.

Freeze: While this depends slightly on the vegan alternatives you use, these vegan egg McMuffins are freezer-friendly (minus the tomato slices). Flash freeze them on a tray until solid, wrap in plastic wrap, and freeze for up to 3 months.

  • 4 tablespoons of vegan mayo
  • 2 tablespoons of ketchup
  • 2 teaspoons of mustard
  • 1 tablespoon of pickle juice
  • 1 large tomato, thinly sliced
  • 4 English muffins
  • 1 box of folded Just Egg (4 eggs)
  • 4 vegan sausage patties
  • 4 tempeh vegan bacon strips (optional)
  • 2 slices of vegan cheddar cheese, cut in half

Instructions

  • In a small bowl, mix the mayo, ketchup, mustard, and pickle juice. Mix well and set aside.
  • Slice the tomato and set aside.
  • Optionally, toast the English muffins.
  • While the English muffins are toasting, cook the Just Egg according to package instructions. At the same time, in a separate pan, cook the patties and bacon according to package instructions. When the patties are about to be ready, place a slice of vegan cheese on top of each patty and cover with a lid. Turn off the heat and let it sit for a couple minutes for the vegan cheese to melt.
  • To assemble the sandwich, grab the English muffins and drizzle some of the sauce. Then, add the Just Egg, sliced tomato, vegan sausage patty, and vegan bacon. Drizzle some more sauce and top with the other slice of bread.
